Ingredients
- 1 cup jasmine rice, cooked
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 tsp salt
- 4 Nori sheets
- 1/2 cup imitation crab meat
- 1/2 cup cooked shrimp, tail removed
- 1/2 avocado, sliced
- 1/2 cucumber, julienned
- 1/4 cup mayonnaise
- 1 tbsp Sriracha sauce
Instructions
- Prep your ingredients: Cook your jasmine rice according to package directions. In a small bowl, mix together the rice vinegar, sugar, and salt. Set aside.
- Place a Nori sheet onto a sushi mat. Spread 1/4 of the cooked rice onto the Nori sheet, leaving a 1-inch border at the top.
- In the middle of the rice, place a layer of imitation crab meat, followed by cooked shrimp, avocado slices, and julienned cucumber.
- Roll the sushi tightly, using the sushi mat to press down on the roll as you go. Use a little water to moisten the bare border of the Nori sheet and press to seal the roll.
- Repeat the process with the remaining Nori sheets and ingredients.
- In a small bowl, mix together the mayonnaise and Sriracha sauce. Transfer the sauce to a squeeze bottle or ziplock bag with the corner snipped off.
- Slice the sushi roll into bite-sized pieces and serve with the spicy mayo for dipping.
